Shoyu Butter Noodles

A 15 minute meal that’s buttery, rich and full of umami. Perfect comfort meal to enjoy after a long day at work.

Ingredients

  • 200 g noodles (udon, wheat noodles or ramen work best)
  • 2 tbsp vegan butter
  • 100 g shiitake mushrooms or brown button mushrooms sliced
  • 2 stalks green onion sliced
  • 3 tbsp 45ml soy sauce
  • ½ tsp garlic powder
  • 1/2 cup frozen shelled edamame or hericot verts
  • sesame seeds for garnish

Instructions

  • Boil noodles according to instructions.
  • Add the butter and mushrooms to a large pan on high heat. Cook until the mushrooms are lightly golden.
  • Add the noodles, green onion, soy sauce, and garlic powder. Cook for a minute.
  • Lastly, add the beans and cook until heated through.
  • Enjoy the meal!
