Shoyu Butter Noodles
A 15 minute meal that’s buttery, rich and full of umami. Perfect comfort meal to enjoy after a long day at work.

Ingredients
- 200 g noodles (udon, wheat noodles or ramen work best)
- 2 tbsp vegan butter
- 100 g shiitake mushrooms or brown button mushrooms sliced
- 2 stalks green onion sliced
- 3 tbsp 45ml soy sauce
- ½ tsp garlic powder
- 1/2 cup frozen shelled edamame or hericot verts
- sesame seeds for garnish
Instructions
- Boil noodles according to instructions.
- Add the butter and mushrooms to a large pan on high heat. Cook until the mushrooms are lightly golden.
- Add the noodles, green onion, soy sauce, and garlic powder. Cook for a minute.
- Lastly, add the beans and cook until heated through.
- Enjoy the meal!
