Sun-Dried Tomato Pesto Pasta
This pesto is filled with umami and super simple to make. It can be enjoyed with pasta, or as a spread on a toast or in a wrap.
Ingredients
- pasta of choice depending on the amount of servings
- 150 g sun-dried tomatoes in oil
- 4-6 tbsp of oil from jar of sun-dried tomatoes
- 1 handful hazelnut, almonds or walnuts
- 1 handful fresh basil
- 3 tbsp lemon juice or more for taste
- 2-4 cloves garlic
- 2 tbsp nutritional yeast or vegan parmesan cheese
- 2-3 tbsp of water for smoother consistency
- 1/2 tsp salt
- 1 pinch black peppar
Instructions
- Boil the pasta according to the instructions.
- Blend all the ingredients in a food processor. Taste and adjust the flavour if needed.
- Mix pasta with the pesto and enjoy!
