Sun-Dried Tomato Pesto Pasta

This pesto is filled with umami and super simple to make. It can be enjoyed with pasta, or as a spread on a toast or in a wrap.

Ingredients

  • pasta of choice depending on the amount of servings
  • 150 g sun-dried tomatoes in oil
  • 4-6 tbsp of oil from jar of sun-dried tomatoes
  • 1 handful hazelnut, almonds or walnuts
  • 1 handful fresh basil
  • 3 tbsp lemon juice or more for taste
  • 2-4 cloves garlic
  • 2 tbsp nutritional yeast or vegan parmesan cheese
  • 2-3 tbsp of water for smoother consistency
  • 1/2 tsp salt
  • 1 pinch black peppar

Instructions

  • Boil the pasta according to the instructions.
  • Blend all the ingredients in a food processor. Taste and adjust the flavour if needed.
  • Mix pasta with the pesto and enjoy!
